Old Bear's Recipe of the
Month
May 1995
Authentic
Lone Star Chili
2 Tablespoons vegetable
oil
2 pounds stewing
beef, cubed
1 cup chopped
onions
1 green bell pepper
1 clove garlic,
minced
1 can tomato paste (12 ounces)
2
1/2 cups water
2 pickled jalapeno chiles,
rinsed, seeded
and chopped
1
1/2 Tablespoons chili powder
1/2 teaspoon crushed
red pepper
1/2 teaspoon salt
1/2 teaspoon dried
oregano
1/2 teaspoon cumin
1 can pinto
beans, drained (15 1/2 oz) if you insist!
In a large heavy pan,
heat oil and brown beef cubes on all sides.
Add onions, bell pepper and garlic, and saute
them with beef for about five minutes.
Add all the remaining
ingredients, except the beans (if you insist on using beans). Simmer the chili for at least 1 1/2 hours
until the meat is tender, at which point you can add the beans if you
insist.
Simer for another 1/2 hour.
Serve with corn bread and
a nice cold Long Neck.
