Mushroom and Gruyere Strata

   1 loaf         white bread (day old), cubed

   1 large        red onion, diced

   4 cups         mushrooms, sliced

   2 cups         Gruyere cheese, grated

   2 large        eggs

   4              egg whites

   1 cup          milk

   2 Tablespoons  canola oil

                  fresh ground pepper

                  releasing spray (PAM)

 

Slice bread into cubes.  (Do not remove crust.)

 

Clean and slice mushrooms.  Dice red onion.  Grate

Gruyere cheese.

 

Beat together whole eggs, egg whites and milk.

 

Sauté onion in canola oil for 3 minutes.  Add mushrooms

and sauté 7 minutes more.

 

Spray a large oval baking dish with releasing spray.

Layer half of the bread cubes to cover the bottom of

the baking dish. 

 

Spread half of mushroom and onion mixture over bread

cubes.  Grind fresh black pepper lightly.  Sprinkle with about half of the grated Gruyere cheese.

 

Scatter a handful of cubed bread over cheese.  Add

remaining mushroom mixture followed by remaining bread.  Sprinkle with remaining cheese. 

 

Pour egg-milk mixture over all, as evenly as possible.  Grate fresh nutmeg over top, lightly. 

 

Cover the dish with plastic wrap and let sit at least

one hour or longer before baking.

 

Bake for one hour in a 350 degree oven.
