Make rice using two measuring cups.

 

Chop one large onion.  Saute onion in olive oil. 

Add 1 tsp thyme to onion while sauteeing.

 

Chop the roasted eggplant in 1 inch dice.

 

Two small slide in containers contain cooked lamb.  Chop one of

them in 1/2 inch dice.

 

Use two cans of chopped tomatoes from Costco with their juice.

 

Crumble one cup of feta.

 

Spray lasagna pan with Pam  (You will need to get a new one

  from the pantry)

 

Layer the casserole ingredients as follows:

 

  1/2 eggplant

  1/2 or less rice

  one can tomatoes

  all of chopped lamb

  1/2 or less rice

  1/2 eggplant

  1 can tomatoes

  Crumbled Feta.

 

Cover with Aluminum foil and bake for 30 minutes in a preheated 350 degree oven.  Serve with salad.

 

You may have more rice than you want.  Save the rest.  If you want

to cook more than two containers so you will have some with the leftover chinese food, feel free.
