Old Bear's Recipe of the Month

July 2003

 

            Kahlúa Chili

            ------------  

  

    1/4 cup          vegetable oil

      2 medium       onions, chopped

      2 cloves       garlic, minced

      3 pounds       ground beef, beef cubes, pork, etc.

      1 can          tomatoes, semi-drained (1 lb 12 oz)

      1 can          red kidney beans, drained (1 lb 11 oz)

    1/2 cup          green pepper, chunked

    1/2 cup          Kahlúa

    1/4 cup          parsley, chopped

      3 Tablespoons  chili powder

      1 Tablespoon   tomato paste

      1 teaspoon     salt

      1 teaspoon     red cayenne pepper

      1 teaspoon     cumin powder

      1 teaspoon     oregano leaves, dried and crushed

                     grated cheddar cheese

                     chopped onion

 

In a 4-quart pot, heat oil.  Add onions and garlic, sauté until

transparent.  Add meant and brown.  Add remaining ingredients except

the cheese and chopped onion.  Mix well.  Bring to a boil, then

reduce heat and simmer for 45 minutes, partially covered.  Serve in bowls; top with cheese and onions
