Dried Plum & Oatmeal Bread

 

          1 1/4   cup                      milk

             1/2   cup                      uncooked oatmeal

          1 1/2   cup                      all-purpose flour

          1 1/2   teaspoon             ground cinnamon

          1 1/2   teaspoon             ground ginger

                1   teaspoon             baking soda

                1   teaspoon             baking powder

             3/4   cup                      sugar

             1/2   cup                      margarine

                1   large                    egg

                1   medium              banana, mashed

             3/4   cup                      dried plums, chopped

             3/4   cup                      chopped pecans

 

1.   In a large bowl, stir together the flour, cinnamon, ginger, baking soda and baking powder.  Add the dried plums and stir to evenly coat with the flour.  Set aside.

2.   In a separate bowl, combine the milk and oatmeal.  Let set for 10 minutes.  Stir in sugar, margarine, banana and egg.  Mix until well blended.

3.   Add the milk mixture to the flour mixture and stir until just combined.

4.   Stir in the pecans.

5.   Spread mixture evenly into a greased and floured loaf pan.

6.   Bake at 350° F until a thin wooden skewer inserted into the center comes out clean.  (about 50 – 60 minutes.)

7.   Cool for 10 minutes.  Remove from pan and cool completely on a wire rack.
