Healthy Multi-Grain Bread

Similar to that baked by Milton’s Bakery of Del Mar, California

 

    4 teaspoons    yeast

    3 Tablespoons  vital wheat gluten

    5 cups         unbleached enriched white flour

  1/4 cup          brown rice flour

 

2 3/4 cups         water

  1/4 cup          honey

    2 Tablespoons  brown sugar

    2 teaspoons    salt

    1 teaspoon     vinegar

 

  1/4 cup          cornmeal

  1/4 cup          wheat bran

  1/4 cup          rolled oats

  1/4 cup          oat bran

 

                   black and white sesame seeds

                   poppy seeds

                   soy flour (wash)

 

Place first 4 ingredients into dough maker or mixing bowl.

 

Mix next 5 ingredients in a large Pyrex measuring cup.  Stir in the last 4 ingredients and heat in microwave until the grains are softened and the mixture is warm to the touch (about 105 deg F).

 

Slowly pour warm liquid into flour/yeast and mix well.  Kneed for about 10 minutes.  Cover and allow to rise until doubled (about 25 minutes).

 

Deflate dough and knead for 15 minutes.

 

Cover and allow to rise for another 20 minutes or so.

 

Deflate, knead briefly, shape and place in two loaf pans which have been sprayed with releasing spray.  Cover each pan with plastic wrap sprayed with releasing spray and allow to rise for about 15 minutes until the dough expands to the corners of the pans.

 

Make a wash by combining approximately 2 teaspoons of soy flour with some cold water.  Gently brush onto shaped loaves.  Sprinkle with poppy and sesame seeds.  Gently press seeds into the surface of the loaves so that they will adhere to the wash.

 

Re-cover each pan with the plastic wrap and allow to rise until about 1-inch over top of pans (about 1 hour).

 

Place in pre-heated 400 degree oven.  After 10 minutes, reduce oven temperature to 375 degrees and continue baking for another 25 minutes until done.

 

Remove from pans and cool.   Makes two large loaves.
