Applesauce Multigrain Muffins
Streusel Topping
1/3 cup multigrain
cereal or rolled oats, uncooked
2 Tablespoons brown
sugar
1 Tablespoon butter,
melted
1/2 teaspoon ground
cinnamon
Muffins
1 cup multigrain
cereal or rolled oats, uncooked
1
1/2 cup flour
1 teaspoon baking
powder
1/2 teaspoon baking
soda
1/2 teaspoon ground
cinnamon
1 cup applesauce
1/2 cup non-fat
or low-fat milk
1/2 cup brown
sugar
1/4 cup sunflower
oil
1 large egg
1. Preheat
oven to 400°
F. Line twelve muffin cups with paper
baking cups (or lightly oil the bottoms of the muffin cups.)
2. Prepare
ropping by mixing the cereal, brown sugar and
cinnamon together. Add the melted butter
and mix well.
3. Prepare
muffins by combining the cereal, flour, baking powder, baking soda and cinnamon
in a large bowl. Mix well.
4. In
a separate bowl, mix together the applesauce, milk, brown sugar, oil and egg.
5. Add
the dry ingredients to the wet ingredients and stir until the dry ingredients
are moistened.
6. Bake
of 18 to 20 minutes. Remove from
oven. Serve warm.
