Old Bear's Recipe of the Month December 1996 Sauteed Scallops with Orange ------------------------------ 1 1/4 lb large scallops, rinsed and cut it half 2 cups bread crumbs 1 tsp fresh thyme 1 tsp fresh basil 1 tsp fresh marjoram 1 tsp fresh chives 2 Tbsp orange rind, chopped 1/2 tsp ground pepper 2 Tbsp butter 2 Tbsp virgin olive oil 1 dozen orange wedges, peeled Combine the herbs, pepper, crumbs and orange rind. Toss the scallops in the mixture. Saute lightly coated scallops in the butter and olive oil over a medium flame for 7 to 8 minutes. Do not overcook!
