Old Bear's Recipe for... Easy Mix Pancakes ----------------- This is an excellent recipe for kids because everything is mixed in a 2-quart shaker. Other than the shaker itself, some measuring cups, a spoon, a spatula and the skillet, there should be nothing much to clean up! And because all the mixing is done in a shaker, there are fewer chances for spills. 1 1/2 cups milk 2 Tbsp cooking oil 2 eggs 1/2 tsp salt 2 cups flour 1 Tbsp sugar 3 tsp baking powder Place the first four ingredients into a 2-quart shaker. Close the lid and shake vigorously to 'beat' the eggs. Add the next three ingredients. Close the lid and shake again to mix the batter. (Note: The baking powder will liberate some carbon dioxide gas when moistened. This may cause the shaker to ooze a little around the lid or, if the lid is very tight, to be under slight pressure when opened. A great moment for giving the kids a science lesson in the kitchen!) Drop batter from a spoon onto a hot, non-stick griddle or skillet ] and cook until the top is full of tiny bubbles and the underside is brown. Turn and brown the other side.
