Cranberry-Banana Bread ---------------------- 3/4 cup frozen cranberries, chopped 1 teaspoon orange rind, grated 1 cup sugar 1 3/4 cup flour, sifted 2 teaspoons baking powder 1/2 teaspoon salt 1/2 teaspoon baking soda 1/3 cup vegetable oil 2 large eggs 3/4 cup ripe bananas, mashed (about 3 small) In a small bowl, stir together cranberries, orange rind, and 1/2 cup os sugar; set aside. Into a large bowl, sift together flour, baking powder, salt, baking soda and remaining 1/2 cup sugar; set aside. In another small bowl, mix oil and eggs until well blended; stir in bananas. Add banana and cranberry mixture to dry ingredients; stir until just moistened. Pour batter into greased 9x5x3" loaf pan. Bake in 350 °F oven 1 hour, or until loaf is golden brown and toothpick inserted in center comes out clean. Cool in pan 10 minutes. Remove; cool on rack.
