Old Bear's Recipe of the Month Feb 1995 Fresh Red Chile Sauce 14 to 24 fresh RED CHILES 1 tsp salt 1 clove garlic 1 small onion, sliced 1 tsp oregano 1/2 cup water 1 Tbsp oil Remove stems, seeds, and veins of fresh red chiles. Cover with boiling water and let stand for ten minutes. Remove chiles and place with salt, garlic, onion, and oregano in blender. Add water, according to blender requirements, and blend until all ingredients are reduced to a smooth paste. Put sauce into heavey pan. Add 1/2 cup water (or more, depending upon how much was used in the blending process). Add oil. Simmer about 1/2 hour, or until mixture has the desired consistency.
