Dinner Tonight Buffalo Chili ------------- 1 lb Ground Buffalo 1 oz Canola Oil 2 1/3 oz New Mexico Ground Chili Powder 3/4 cup Chopped Onion 1/2 Tbl Chopped Garlic 1 1/2 cup Diced Tomatoes 1 Tbl Vinegar 1 tsp Ground Coriander 1/8 tsp Ground Cloves 1 tsp Cumin 1 Tbl Mexican Oregano 2 tsp Brown Sugar 3 cups Beef Consume 12 oz Red Kidney Beans (drained) 12 oz Pinto Beans (drained) Brown buffalo in oil in a deep pot. Add onions and cook until tender. Combine all other ingredients in pot and simmer for two hours. Serves 4-6. Note: Although buffalo is similar to beef, it needs to be handled and cooked differently. Buffalo must be cooked at slightly lower temperatures and requires less cooking time than beef due to its lower fat content. The main thing to remember when cooking buffalo is "slow and low." Beer Bread ---------- 3 cups Self-Rising Flour 3 Tbs Sugar 12 oz Dark Beer (at room temperature) 4 oz Butter Preheat oven to 375 degrees F. Combine flour, sugar and beer. Stir and mix. Place in greased 9 1/2 x 5 1/2 loaf pan. Bake for approximately 20 minutes. Melt 1/3 of the butter and pour over the loaf. Return to oven for another 15 minutes. Melt another 1/3 of the butter and pour over the loaf. Again, return to oven for 15 minutes. Melt the final 1/3 of the butter and pour over the loaf. Return to oven for another ten minutes or until top is nicely browned and knife inserted into loaf comes out clean. Cool on rack before serving slightly warm.
